Gluten-free Brownies Recipe
- Walnuts (200 grams)
- Unsweetened Coconut Powder (85 grams)
- Baking Soda (7 ml/g)
- 2 eggs
- Honey (80 ml)
- Coconut Oil (70 ml)
- Coconut Milk (240 ml)
- Vanilla Extract (10 ml)
- 1 Zucchini (grated)
- Butter (to grease pan only)
- Optional: Dates chopped 100g
Preheat oven to 170.
Toss walnuts in a food processor and grind into crumbs. Place in a large bowl and mix in cocoa powder and baking soda.
Heat the coconut oil in a small pan on low until just melted.
In a separate bowl, whisk eggs for a minute and then add honey, coconut milk, Vanilleextract and melted coconut oil, blending all wet ingredients completely.
Combine bowls and stir together.
Add grated Zuchetti to the mixture and if desired, the optional dates. Stir everything together again.
Pour mixture into a lightly buttered baking pan and add several whole walnuts or cashews on the top.
Bake for 45-55 minutes, taking care that the top does not burn. Allow to cool and serve with apple slices. Enjoy!
