If you’ve decided to toss the rice, pasta and bread out of your diet (in whole or part) or even if you love your grains and just want to try something new, here’s a look at rice made from cauliflower. It makes a great substitute for white rice (a fairly low nutrient, high carbohydrate, insulin-spiking food). When served with veggies and a sauce, it looks like rice and has such a mild flavor that the sauce easy takes over perhaps making you forget that you’re eating a healthy alternative!

 

Instructions:

1) Chop a head of cauliflower into large florets and pulse in a food processor, grate with a hand-held grater, or dice away with your super Ninja knife skills. Your objective: a mound of chopped up cauliflower that looks fairly similar to rice. Don’t stress about this step. It’s almost impossible to get it wrong!

2) Steam for about 10 minutes or cook for 5 minutes in the microwave in a covered dish. You can also cook it in a WOK and get creative with oils and spices.

Serve under your favorite stir-fry of vegetables and meat along with a healthy sauce and you’ve got yourself a healthy, low carb, high fiber and most importantly, yummy meal!
